Description

This Cowgirl Queso Crockpot Dip is the ultimate crowd-pleaser, blending savory sausage, creamy Velveeta, and zesty Rotel tomatoes with bold Tex-Mex queso flavors. Perfect for game day, tailgating, or cozy nights in.

Ingredients

Units Scale
  • 1 lb hot or mild sausage (or ground beef)
  • 1 (8 oz) package cream cheese
  • 1 (8 oz) package Velveeta cheese
  • 1 cup sour cream
  • 1 can Rotel tomatoes (undrained)
  • 1 can corn (drained)
  • 1 can black beans (drained and rinsed)
  • 1 tbsp chipotle seasoning
  • 1 tbsp hot sauce of your choice (optional)

Instructions

  1. Brown the sausage or ground beef in a medium skillet over medium heat. Drain excess fat.
  2. Transfer cooked meat into your slow cooker.
  3. Add cream cheese, Velveeta, sour cream, Rotel tomatoes, corn, black beans, chipotle seasoning, and hot sauce.
  4. Stir to combine.
  5. Cover and cook on high for about 2 hours until the cheese is melted and smooth.
  6. Stir well before serving to ensure even consistency.
  7. Serve warm with tortilla chips, garnishing with chopped cilantro or jalapeños if desired.

Notes

Reduce sour cream for a thicker dip. For more spice, increase chipotle seasoning or add jalapeños. Keep warm in the slow cooker to maintain optimal flavor and texture.
