- Made with simple pantry ingredients
- Light, creamy, and perfectly sliceable
- Ideal make-ahead dessert
- Kid-approved and party-ready
- Easy to customize with flavors and toppings
Ingredients

For the layers
- 24 rectangular waffles (store-bought waffle cookies)
For the cream filling
- 2 cups heavy whipping cream, cold
- ⅓ cup powdered sugar
- 1 teaspoon pure vanilla extract
For the chocolate topping
- 1 cup semi-sweet chocolate chips
- 2 tablespoons butter
Ingredient Notes & Substitutions
Rectangular waffle cookies are traditional for Wafeltaart. They soften beautifully in the fridge and create that classic layered look when sliced.
If you prefer a lighter version, you can replace part of the heavy cream with mascarpone or cream cheese for a slightly firmer filling.
For the topping, milk chocolate works if you like a sweeter finish. You can also drizzle white chocolate for contrast.
Instructions
- In a large mixing bowl, whip the cold heavy cream with powdered sugar and vanilla until soft peaks form. The cream should look smooth and fluffy, not grainy.
- Continue whipping just until medium peaks form. Be careful not to overwhip. It should hold its shape but still look silky.

- Line a loaf pan with parchment paper, leaving some overhang for easy lifting.
- Spread a thin layer of whipped cream on the bottom. Place a layer of waffle cookies over the cream.
- Spread another layer of whipped cream on top, smoothing it gently with a spatula. Repeat the layers until you finish with cream on top.

- Melt the chocolate chips and butter together in short intervals in the microwave, stirring until smooth and glossy.
- Pour the melted chocolate over the top layer and spread evenly.
- Refrigerate for at least 4 hours, or overnight, until firm.

- Lift the cake out using the parchment overhang and slice with a sharp knife. You will see those beautiful softened layers inside.
Pro Tips for Success
- Use very cold cream for better whipping results.
- Chill the mixing bowl beforehand for extra stability.
- Let the cake rest overnight for the softest texture.
- Slice with a warm knife for clean edges.
I have made this version several times for family gatherings, and overnight chilling really makes the layers melt together perfectly.
Storage and Reheating
Store Wafeltaart in the refrigerator, covered, for up to 3 days.
Do not freeze, as the texture of the whipped cream can change after thawing.
Make Ahead & Freezing

This dessert is perfect to make one day in advance. In fact, it tastes even better the next day once the waffles soften into the cream.
Freezing is not recommended for the best texture.
Tips and Variations
- Add a thin layer of raspberry jam between layers for a fruity twist.
- Mix cocoa powder into the whipped cream for a chocolate version.
- Add crushed hazelnuts between layers for crunch.
- Drizzle caramel sauce over the chocolate topping.
- Decorate with fresh berries before serving for a lighter look.
FAQs
At least 4 hours, but overnight gives the best texture.
This recipe works best with crisp waffle cookies. Fresh waffles may become too soft.
It was likely overwhipped. Stop as soon as medium peaks form.

Ingredients
- 500 g mascarpone
- 200 ml slagroom
- 2 eetlepels suiker
- 1 zakje vanillesuiker
- 1 zakje klopfix
- 1 blikje Hak kersenvlaai
Geniet!
Notes
